White Bean Pumpkin Dip

About the Recipe

Ready for a versatile dip that’s as good for your health as it is for your taste buds? This white bean pumpkin dip is packed with nutrients that support hormone balance, digestion, and overall health. Use it as a spread on wraps and burgers or enjoy it as a dip with your favorite veggies!

Ingredients

  • 1/2 Lemon, juiced and zested

  • 2 Tbs Tahini

  • 1 Clove Garlic, crushed

  • 1 1/2 cups White beans, drained and rinsed

  • 2 Tbs Olive oil

  • 1 1/2 cups Pumpkin purée

  • 1/4 tsp Cayenne pepper

  • 1/2 tsp Salt

  • 1 tsp Sage, fresh, chopped

  • 2 Tbs Pumpkin Seeds


Preparation

1. Prep:

* Zest and juice the lemon.

* Drain and rinse the beans.


2. Make:

* Place the lemon juice, lemon zest, tahini, garlic, white beans, olive oil, pumpkin purée, cayenne pepper, salt, and sage in a food processor.

* Pulse until smooth, adding water to thin if necessary.

* Transfer to a bowl and allow to sit for 15 minutes before garnishing with pumpkin seeds.


3. Serve:

* Serve with raw vegetables and enjoy!
