1/4 cup vegan protein powder of choice (28g)
1 tbsp baking powder
1/2 tsp sea salt
2 tbsp maple syrup
1 cup water (plus more as needed)
Berries of choice (we love blueberries!)
Cooking spray or Earth Balance (for non-stick pan)
Preparation
Instructions:
In a mixing bowl, whisk together the flour, protein powder, baking powder, and salt until fully combined.
Add maple syrup or your favorite sweetener, then gradually mix in the water until the batter is thick but pourable. Avoid overmixing—it’s okay if it’s a little lumpy!
Let the batter rest for 5-10 minutes while you heat your pan over medium-low heat. Use a light coating of cooking spray or Earth Balance if needed.
Fold in your berries for a burst of sweetness and antioxidants in every bite.
