Vegan Protein Oatmeal Breakfast Bars

About the Recipe

Packed with protein, fiber, and healthy fats, these bars are easy to prepare ahead of time.

Ingredients

  • 150g oats

  • 3 scoops vegan vanilla protein powder

  • 20g chopped walnuts

  • 1 tsp baking powder

  • 2 tbsp maple syrup

  • 2 tbsp ground flax seeds

  • 1 tbsp coconut flour

  • 1 tbsp chia seeds

  • 1 large carrot, grated 

  • 1 tbsp cinnamon

  • 1/2 tsp nutmeg

  • Pinch of salt


Preparation

Preheat your oven to 160°C fan/180°C conventional (350°F).

Line an 8x8-inch baking pan with parchment paper. 📜

In a large bowl, combine oats, protein powder, chia seeds, flaxseeds, coconut flour, cinnamon, nutmeg, salt, and walnuts. Mix well.

Slowly add the soy milk, mixing as you go (you may need more or less depending on the protein powder).

Stir in the grated carrot and mix thoroughly.

Press the mixture into the lined pan and flatten evenly.

Bake for 18–20 minutes until the edges are golden-brown but the center remains slightly soft.

Let the bars cool before cutting into six servings.
