Ingredients
Dry Lentils: 1 ¼ cup
Water: 4 cups
Red Pepper, diced: 1 cup
Your Favorite Salsa: 1 ¼ cup
Frozen Corn: ¾ cup
Chili Powder: 1 tbsp
Dried Oregano: 1 tbsp
Smoked Paprika: 1 tsp
Black Pepper: ¼ tsp
Salt: to taste
Cilantro: for garnish
Preparation
Combine water, lentils, pepper, salsa, and all spices in a large pot. Stir, bring to a boil, then simmer covered (lid slightly open) for 15-20 minutes or until lentils are tender.
Add corn, heat through, and adjust seasonings to your liking.
Serve garnished with cilantro, and feel free to add lime juice, avocado, or nutritional yeast for extra flavor!
