About the Recipe

Sometimes life gets hectic (ok, a lot of the time!), and it feels like there’s just no time to whip up a nourishing meal. But I’ve got you covered with this Lazy Lentil Soup - it’s quick, delicious, and perfect for those busy days!

Ingredients

  • Dry Lentils: 1 ¼ cup

  • Water: 4 cups

  • Red Pepper, diced: 1 cup

  • Your Favorite Salsa: 1 ¼ cup

  • Frozen Corn: ¾ cup

  • Chili Powder: 1 tbsp

  • Dried Oregano: 1 tbsp

  • Smoked Paprika: 1 tsp

  • Black Pepper: ¼ tsp

  • Salt: to taste

  • Cilantro: for garnish


Preparation

  • Combine water, lentils, pepper, salsa, and all spices in a large pot. Stir, bring to a boil, then simmer covered (lid slightly open) for 15-20 minutes or until lentils are tender.

  • Add corn, heat through, and adjust seasonings to your liking.

  • Serve garnished with cilantro, and feel free to add lime juice, avocado, or nutritional yeast for extra flavor!
