Vegan Black Bean & Sweet Potato Quesadillas

Ingredients

  • 2 whole wheat tortillas

  • 4 oz vegan cheese (or swap for nutritional yeast or omit!)

  • 10.5 oz sweet potato, softened

  • 10.5 oz black beans, drained & rinsed

  • Optional toppings: vegan Greek yogurt, salsa, avocado slices


    💪 Want more protein? Add in seitan chorizo, baked tofu, or softened textured vegetable protein (TVP) to amp it up.

Preparation

1. Heat a skillet with a little oil.

2. While it warms, mash the sweet potato and black beans together in a bowl.

3. Lay one tortilla on the skillet and sprinkle with vegan cheese (or your fave sub).

4. Spread the sweet potato/bean mash on top and cover with the second tortilla.

5. Heat until the bottom is golden brown, flip, and cook the other side.
