These Tempeh Black Bean Burgers are packed with plant-based protein, fiber, and flavor—light, satisfying, and incredibly delicious!

Ingredients
1 tbsp milled flaxseed
3 tbsp unsweetened almond milk
2 medium scallions, sliced
8 oz tempeh, crumbled
1 cup black beans, drained & rinsed
1 tsp smoked paprika
1 tsp dried parsley
1 tsp dried oregano
½ tsp onion powder
½ tsp garlic powder
1 tbsp olive oil
1 head romaine lettuce, leaves separated
1 medium tomato, sliced
Salt & pepper, to taste
Olive oil spray

Preparation
1️⃣ In a small bowl, mix flaxseed and almond milk. Let sit for 5 minutes to thicken. 2️⃣ Preheat oven to 400°F and line a baking sheet with parchment paper.
3️⃣ In a large bowl, combine crumbled tempeh, black beans, and scallions.
4️⃣ Add smoked paprika, parsley, oregano, onion powder, garlic powder, flax mixture, and olive oil. Mash together until well combined.
5️⃣ Shape the mixture into 4-5 patties (about 1.5 inches thick) and place on the baking sheet.
6️⃣ Bake for 15 minutes, flip, spray with olive oil, and bake for another 15 minutes until firm and golden.
7️⃣ Serve on romaine leaves with tomato slices and your favorite toppings!
