About the Recipe
Almond Joy Medjool Dates – A decadent, plant-based take on the classic candy bar! These stuffed dates are loaded with fiber, healthy fats, and just the right amount of dark chocolate to satisfy your sweet tooth.

Ingredients
14 Natural Delights pitted Medjool dates
½ cup unsweetened shredded coconut
⅓ cup canned coconut cream (from full-fat coconut milk – chill overnight for best results!)
1 ½ tbsp maple syrup
14 raw or toasted almonds
½ cup dairy free dark chocolate
1 tbsp coconut oil
Optional: Extra shredded coconut for garnish
Preparation
1️⃣ In a blender or food processor (we’re using the Twist & Chop Electric Food Processor), blend the shredded coconut, coconut cream, and maple syrup. You want a combined mixture—chunky is totally fine!
2️⃣ Spoon the coconut filling evenly inside each pitted Medjool date. Press an almond on top of each one and pop them into the freezer while you melt the chocolate.
3️⃣ In a small bowl, melt the dark chocolate, then stir in the coconut oil until smooth and glossy.
4️⃣ Dip each stuffed date into the chocolate—cover completely, halfway, or just drizzle over the top. Sprinkle with extra shredded coconut if you like!
5️⃣ Place the dates back in the fridge or freezer to set. Enjoy immediately or store in an airtight container—they’ll last up to a week in the fridge or 3 months in the freezer!
